S'Mores Oatmeal


This recipe is from the Hungry Girl 300 Recipes Under 300 Calories cookbook.

The only thing I changed was to make it a full cup of oats, which adds an extra 75 calories to the recipe. That brings the calorie count to 374 calories, but made enough oatmeal for another serving, so 187 calories per serving. I don't know how it changes everything else (fat, sodium, etc) but you could add it up based on whatever type of oatmeal you use.

Per Serving (entire recipe): 299 Calories, 9g fat, 512mg sodium, 47.5g carbs, 6.5g fiber, 13g sugars, 8.5g protein
Ingredients:
½ cup old-fashioned oats
1 25-cal packet hot cocoa mix
Dash salt
1 cup unsweetened vanilla almond breeze
2 tsp mini semi-sweet chocolate chips, divided
2 Tbsp mini-marshmallows
¼ sheet (1 cracker) low-fat honey graham crackers, crushed

Directions:
Combine oats, cocoa mix, and salt in a nonstick pot on the stove. Add Almond Breeze and 1 cup water. Bring to a boil, and then reduce to a simmer.
Cook for 12-15 minutes, stirring occasionally, until very thick and creamy.
Remove pot from heat, add 1tsp chocolate chips and stir until melted.
Transfer to a bowl and top with marshmallows, graham cracker, and remaining chocolate chips.

For those of you that don't know, almond breeze can be found in Kroger in the organic foods section, right across from the bread. It was kinda high, $7 for a carton, but I'll be able to make a ton of this oatmeal for one carton.

And that's it! I now have another serving tucked away in its container for another day of breakfast.
